2017 has started off at a fast sprint and it is only now, 31 days in that I've find time to write a blog post. Most of January has been spent planning and we now have 11 weddings, 2 private parties and 3 festivals booked. It's going to be a busy summer! Today I'm in the kitchen making Mojito syrup for our signature Mojito cocktail which we are serving in The Boiler House this weekend for a private do, so I thought I would share the recipe with you! It's the secret to the mintiest tastiest Mojito. Promise. :)
Simple syrup is an easy 1:1 ratio of sugar to water — two ingredients that I’m sure you always have on hand and takes only a few short minutes to make. All you have to do is simmer the two together while stirring, until all of the sugar is dissolved.
Turn the heat off and add a large bunch of mint roughly chopped, make sure the stalks are in there too as they contain most of the aromatic oils.
Leave to steep for 2 hours, then strain and bottle. It's so easy and its a game changer.
